Salted Caramel Fudge

Hey friends! I hope everyone had a very Happy Thanksgiving with their loved ones. We had a great day at our home with the family. Now that Thanksgiving is over, I’m super excited to dive into the Christmas season!

I don’t know about you, but homemade fudge was a HUGE part of my Christmas. My mom made homemade fudge every single year and it was always something I looked forward to. It is probably my favorite Christmas treat, period.

I made this salted caramel fudge a few years ago and posted it on here.. but since then I’ve made a few modifications and it is even better than ever. The cool part about this recipe is that it can be adapted to ANY diet preference. I will include vegan and keto options, and the recipe is already entirely paleo!

This recipe uses canned coconut cream for the caramel top. Feel free to use heavy cream if you decide to make this as well.. but I can’t guarantee how the cook-time will change.

Ingredients
  

Fudge Ingredients

  • 24 ounces dark chocolate chips OR 24 ounces sugar-free chocolate chips like Lily’s brand you can find them here
  • 1/4 cup coconut sugar or keto sweetener any will be fine
  • 1/4 cup organic unsalted butter or coconut oil
  • 1 can coconut cream
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon sea salt

Caramel Ingredients

  • 1 can coconut cream
  • 1/2 cup coconut sugar or swerve brown sugar
  • 2 tbsp butter or coconut oil
  • 1 tsp vanilla extract

Instructions
 

Fudge Process

  • In a heavy bottomed pot, combine coconut cream, butter, and sweetener. Simmer for 15 minutes until reduced slightly. (This is your sweetened condensed milk. Alternatively, you can use canned sweetened condensed milk.)
  • Let cool for 10 minutes, then add chocolate chips and stir until shiny.
  • When everything is melted and shiny, remove from heat and stir in the vanilla extract.
  • Working quickly, pour mixture into a small square pan lined with parchment paper (I used an 8×8″ pan)
  • Let mixture set for 1 hour before pouring caramel (if making). Let cool for 3 hours until slicing.

Caramel Process

  • In a heavy medium sized pot, melt coconut milk and coconut sugar over medium heat.
  • When mixture comes to a boil, turn down to a simmer and simmer for about 30-40 minutes, stirring every few minutes.
  • When mixture is thick and coats the back of a spoon, add the butter or coconut oil and cook for 5-10 more minutes until mixture is very thick.
  • Remove from heat and pour into a heat-safe bowl. Cool for 10 minutes and then pour, while still warm, pour on top of the fudge. 
  • Let set in fridge for 2-3 hours before slicing. Add a finishing salt, if desired. (I used Malden flake salt)

    Please give me measurements for using sweet condensed milk in entire recipe. I have several unused cans in my pantry but don’t want to mess up recipe.
