A few weeks ago I started a keto lifestyle and I am absolutely loving it! So while these may not be paleo, they are grain-free as always. I partnered with High Key to make this recipe for you and let me tell you.. I have a new addiction! You can order the brownie mix I used for this recipe here.
These brownies are best enjoyed cooled overnight.. it may be incredibly tempting to just dive it right away.. but don’t say I didn’t warn you. They may fall apart on you and the flavors won’t be as developed as they could be. Once you go to grab on fresh out of the fridge the next day, you’ll love me! Promise!
They’re not going to be bad if you don’t wait until the next day.. but believe me.. they get even better!
Keto Salted Caramel Cheesecake Brownies
Ingredients
- 1 package High Key Brownie Mix
- 3 eggs divided use
- 1/2 cup butter melted
- 8 ounces cream cheese softened
- 2 TBSP powdered zero calorie sweetener
- 2 tbsp ChocZero caramel syrup
- 1/4 tsp sea salt
- 1 tsp vanilla
Instructions
- Preheat oven to 350°F
- Set cream cheese out to soften for 2 hours.
- Grease an 8×8'' pan with coconut oil or butter, or line with parchment paper.
- In a large mixing bowl, combine high key mix with butter, it will look crumbly after this.
- Fold in 2 eggs with a rubber spatula until batter looks more smooth. Reserve 1/3 cup of the brownie batter for the top.
- Pour brownie batter into pan and let sit until cheesecake mixture is ready.
- With a stand mixer, combine softened cream cheese, powdered sweetener, and additional egg. Whisk until smooth.
- Add in caramel syrup, salt, and vanilla extract. Mix until smooth.
- Pour cheesecake batter on top of brownie batter and then top with the reserved brownie batter. Swirl with a fork or rubber spatula.
- Cool brownies for 1 hour at room temperature, then place in the refrigerator overnight. Slice and serve with extra ChocZero caramel syrup.
