Keto Snickers Rice Krispie Treats

These keto rice krispies are exactly what I needed to curb my sweet tooth when some serious cravings hit.. I used High Key protein krispies to give these babies a classic rice krispie treat flavor.. and they’re packed with protein.. oh.. and NO NET CARBS!! What?!?!

This recipe was completely made on a whim.. I had no idea that it would really work.. and believe me.. it’s truly amazing! I didn’t even need to use marshmallow.. I used Lily’s white chocolate chips.. YUP! You can find them here!

This recipe will easily serve 12-18 people, but if you’re anything like our house.. they’ll be devoured in 2 days by 4 people. If you aren’t doing a keto, you can absolutely make these treats with the regular sugar-filled versions of the ingredients that I list. It will work just as well!

Equipment

  • Double boiler or microwave safe bowls

Ingredients
  

  • 1 cup Sugar-free peanut butter divided use
  • 1 box High Key Protein Krispies
  • ¾ cup Lily's white chocolate chips
  • 2 tbsp ChocZero Caramel Syrup or other keto syrup
  • ½ cup peanuts optional
  • ⅔ cup Lily's milk chocolate bar

Instructions
 

  • Prepare an 8×8" pan with parchment paper. Do not skip the parchment paper!
  • In a double boiler or heat proof boil, melt ½ cup peanut butter and white chocolate chips together in 30 second increments if using a microwave.
  • When the peanut butter mixture is done being melted, add protein krispies and combine with a rubber spatula. Add the rice krispies to pan and pat down with the spatula.
  • Mix remaining 1/2 cup peanut butter with the caramel syrup. Spread to add on top of the rice krispie treats
  • Sprinkle with peanuts, optional
  • Melt the milk chocolate bar in a microwave-proof bowl or double boiler. Pour over top of the treats.
  • Refrigerate treats until ready to eat!
