Easy "Hidden" Veggie Blender Pancakes

A super nutritious and fun breakfast recipe that everyone will love!

Ingredients
  

  • 1 cup whole oats
  • 1 tsp baking powder
  • 1/4 tsp vanilla extract
  • 1/3 cup milk of choice
  • 1 banana
  • 1 egg
  • 1 tsp lemon juice
  • 1 handful raw spinach or frozen raw spinach
  • 1/2 tsp sea salt
  • 1 tbsp honey

Equipment

  • 1 Blender

Method
 

  1. Preheat skillet or griddle to low heat. Cooking these pancake on low heat helps secure their green color, but it isn't necessary. They will just brown a bit if cooked on any higher heat.
  2. Blend all ingredients until smooth.
  3. Cook pancakes on low heat (preferred), about 5 minutes per side.
  4. Double or triple the batch and freeze for future use!
