Healthy Cinnamon Roll Sheet-Pan Pancakes

Happy Thursday guys! As always, it ebbs and flows how much I post on here. I’ve been on a kick about really buckling down and adding nutrition to EVERYTHING my kids eat. It’s easy to get carried away with how busy you are and let a lot slide. Of course, my kids were eating, growing, and healthy.. but was I doing my best with assuring the most amount of nutrition I could get into them? Probably not. No kid is going to have the perfect diet, but I can at least do my part to make sure they’re getting some good stuff in. I hope you find this helpful!!

These sheet-pancakes are eveything I love about breakfast. They’re fluffy, have a gooey, cinnamon swirl, and the cream cheese frosting is TO DIE FOR, yet only sweetened with honey! And of course, they have a little added nutrition worked in 😉

Healthy Cinnamon Roll Sheet-Pan Pancakes

These cinnamon roll sheet pan pancakes are to die for. The added nutrition with almond flour and yogurt ONLY adds flavor, you're going to love them!

Equipment

  • 1 half-sheet pan greased, or lined with parchment paper

Ingredients
  

  • 1 1/4 cup flour organic is best
  • 3/4 cup almond flour if you don't have almond flour, you can use regular
  • 4 tsp baking powder
  • 1/4 tsp baking soda
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1/2 cup greek yogurt full fat, unswetened or low-fat unsweetened
  • 1 1/3 cup milk, or milk replacement add extra as necessary
  • 2 tsp vanilla you can also use vanilla bean paste or add vanilla bean powder to your dry mix
  • 4 tbsp melted butter slightly cooled

Cinnamon Swirl

  • 3 tbsp melted butter
  • 1/4 cup brown sugar swerve or coconut sugar
  • 1 tsp cinnamon
  • 1 tbsp flour

Honey-Vanilla Cream Cheese Frosting

  • 4 ounces softened cream cheese
  • 2 tbsp honey
  • 1 tsp vanilla
  • 1-2 tbsp milk

Instructions
 

Pancake Batter

  • Preheat oven to 400° and grease or line a rimmed half sheet-pan
  • Mix dry pancake ingredients in one bowl and wet ingredients in another.
  • Combine just until mixed, adding a splash of milk if the batter is too thick. DO NOT OVER-MIX. lumps are ok!! Spread evenly onto the pan.
  • Pipe Cinnamon-Swirl on top of the pancakes. Bake for 7-12 minutes, until pancakes are set. Add frosting while still warm and then serve!

Cinnamon-Swirl

  • Mix all swirl ingredients and let sit until you're ready to pipe on the pancakes

Honey-Vanilla Cream Cheese Frosting

  • Whisk all room-temperature ingredients together until smooth. Add more milk if necessary.
