My kids LOVE these pancakes. They are perfect for any day, but are especially fun for St. Patrick’s Day.
Easy “Hidden” Veggie Blender Pancakes
A super nutritious and fun breakfast recipe that everyone will love!
Equipment
- 1 Blender
Ingredients
- 1 cup whole oats
- 1 tsp baking powder
- 1/4 tsp vanilla extract
- 1/3 cup milk of choice
- 1 banana
- 1 egg
- 1 tsp lemon juice
- 1 handful raw spinach or frozen raw spinach
- 1/2 tsp sea salt
- 1 tbsp honey
Instructions
- Preheat skillet or griddle to low heat. Cooking these pancake on low heat helps secure their green color, but it isn't necessary. They will just brown a bit if cooked on any higher heat.
- Blend all ingredients until smooth.
- Cook pancakes on low heat (preferred), about 5 minutes per side.
- Double or triple the batch and freeze for future use!
