Happy Monday!
I don’t know about you, but this time change is absolutely killing me so far! My kids definitely did NOT get the memo. It was so difficult waking them up for school this morning.. my 2 that aren’t in school slept in a bit later, so it’s fine for them. Fall back is WAY worse with little kiddos, so I guess I can’t complain TOO much.
My girls have been SO picky lately, so I’ve been struggling to get balanced nutrition in.. UNTIL these chocolate donuts. This is my trusty, grain-free and gluten-free chocolate cake recipe.. with added hidden veggie powder.. in donut form! And trust me, THEY. ARE. SO. GOOD. Holy moly you won’t even be able to tell these are good for you.. and for them.. because these are for the kids, right? I totally ate 3 of them this morning. 😉
Hidden Veggie Powder.. what the heck is that?
Hidden veggie powder is kind of my secret weapon. You can find some great brands on amazon. I really like picky proof, but they’re currently out of stock. You can find a replacement here. Basically, they’re tiny bottles of magic… aka dehydrated veggies ground into a powder. SO genius.
Healthy Kid’s Breakfast Donuts
Ingredients
- 1½ cup almond flour
- 1/2 cup cassava flour or gluten-free flour OR regular flour
- 1/2 cup cocoa powder
- 1/2 tsp baking soda
- 2 tbsp hidden veggie powder
- 1/2 tsp baking powder
- 3/4 cup coconut sugar or date sugar
- 1/2 tsp salt
- 2 whole eggs room temperature
- 1/4 cup coconut oil or butter or avocado oil
- 1 tsp vanilla extract
- 1¼ cup milk or coconut milk heated until luke-warm
- 1 tsp apple cider vinegar or lemon juice (this activates the leavening agents)
Ganache Ingredients
- 1 cup dark chocolate chips
- 3 tbsp heavy cream or coconut milk
- 1/2 cup keto sprinkles
Instructions
Cake Donut Process
- Preheat oven to 350°F.
- Grease donut pan with avocado oil spray, coconut oil spray, or butter.
- In a stand mixer, combine all dry ingredients and whisk until smooth.
- In a separate, large bowl, combine all wet ingredients and whisk until smooth.
- Add wet ingredients into the stand mixer and whisk until batter is smooth. Add a little bit of water if necessary.
- Pour batter into each mold and bake for 10-12 minutes, or until a toothpick comes out dry.
Ganache Process
- In a heat proof bowl, add chocolate chips and milk or heavy cream and microwave for 45-60 seconds, then whisk smooth.
- Dip each cooled donut into the ganache, then top with sprinkles if desired.
