Hey guys! Welcome to day #1 of my budget cooking series. This week I will be posting 5 healthy dinner recipes that feed 6 people for under $55! These are all meals my kids enjoy, but of course kids can be super picky (and we are not immune to that). Feel free to substitute veg for ones that your kiddos (AND YOU!) will enjoy.
My receipt came to $45.26. Some of the ingredients in the meals are staples (things you should already have in your pantry/spice cabinet) ie ketchup, seasonings, soy sauce (or coconut aminos), citrus juice, etc. I had some ingredients at home already for this week, but the total does come to around $54 for the entire week!
Ok, onto the first meal! Turkey meatloaf. You can pick up ground turkey for very very cheap. I bought a 1 1/4 lb pack of ground turkey for $3.99. This will make one, nice-sized meatloaf! Pair it with a green veg or salad, and potatoes or rice and you have an incredible meal!
Turkey: I used ground turkey. The more fat, the more moist the turkey meatloaf. You will also have more juices if you use a fattier turkey, but that’s fine! You can suction out the extra juices if you’d like. I prefer turkey with more fat. More fat=more flavor!
Mushrooms : The mushrooms are diced soooo small, you will not notice them. DO NOT skip them. They add an incredible amount of moisture to this meal. I’ve made this meatloaf for people who hate mushrooms and they couldn’t even taste them.. don’t be scared!
The Best Meatloaf You’ll Ever Eat
Ingredients
- 1¼ lb ground turkey 92% lean is best
- 1 8 oz package portobello mushrooms or white mushrooms finely diced
- 1 small onion finely diced
- 1 clove garlic minced
- 1/2 cup ketchup divided
- 1 cup almond flour or panko breadcrumbs
- 1/3 cup buttermilk you can make your own with acid in milk
- 2 whole eggs lightly beaten
- 1 tbsp coconut aminos, low-sodium soy sauce, or worcestershire sauce
- 1 tbsp avocado oil or olive oil
- 1/2 tsp sea salt
- 1/2 tsp ground pepper
Instructions
- Heat oven to 375° and line a loaf pan with parchment paper.
- Heat oil in a large skillet over medium-low heat.
- Add onion and mushroom and cook until soft. Add garlic and cook for 1 minute more. Remove mixture from pan and set aside to cool for about 15 minutes.
- In a large bowl, place turkey, ¼ cup ketchup, eggs, coconut aminos or worcestershire, seasonings, and almond flour or panko, and the mushroom mixture. Mix with your hands until the meatloaf comes together.
- Pour meatloaf into pan and press down slightly. Add the remaining ketchup to the top.
- Bake meatloaf for 45 minutes-1 hour, or until a food thermometer reaches 165°F.
- Let stand for about 15 minutes, then slice and serve!
