Hey everyone! It’s been a few weeks filled with desserts and I thought it was about time to throw something savory up here..
We’ve been shopping at Trader Joe’s for the last few weeks and I’ve been grabbing their fully cooked pork belly each time. It’s super yummy after you crisp it up.
This has been my favorite way to have it so far. The cauliflower rice stir-fry is also from Trader Joe’s in the frozen section. It is SO good. You do have to portion it out for keto, though. It does have corn and peas.. but at only 5 net carbs for 1 cup, you can certainly enjoy some of it. Remember, ketosis is a state. There really is no such thing as “keto foods”.. more like keto-friendly foods. You can pretty much eat whatever you want.. so long as you’re keeping it to 20-50 grams of net carbs per day. I made a super simple and yummy teriyaki sauce to go on top of this. You just need a few ingredients and a couple of minutes. Since the cauliflower rice is done for you, this dish is a super quick lunch or dinner. If you don’t want to make the teriyaki sauce, you can cut another corner and order some here.. but be sure to use the serving size.
The trick to getting this to taste like legit fried rice is to first fry the pork belly. I cut mine into small cubes and fried them in avocado oil until all of the sides were crispy. Then, I basically just covered them with the teriyaki and added the pork belly to the top of the Trader Joe’s cauliflower fried rice.. Seriously, so simple!
Keto Crispy Pork Fried Cauliflower Rice
Ingredients
- 1 tbsp avocado oil
- 1 package Trader Joe's Pork belly
- 1 bag Trader Joe's Cauliflower Fried Rice
- ½ cup sugar snap peas
- 2 tbsp Primal Kitchen Teriayki Sauce or homemade keto-friendly teriyaki sauce
- 1 tsp sesame seeds
- ½ tsp chili flakes
Instructions
- Rinse and dry pork belly according to package directions. Cut into small cubes.
- Heat avocado oil in a large, non-stick pan over medium heat. Add pork belly and brown on all sides until crispy.
- Remove pork belly from pan and set aside on a paper towel to drain fat. Reserve some fat from the pan.
- Using half of the fat from the pan, add cauliflower rice and sugar snap peas and saute cauliflower rice for 5-7 minutes until veggies are softened.
- Toss the pork belly in the teriyaki sauce, then top the "rice" with the pork belly, sesame seeds, and chili flakes.
