PULLED PORK. Need I say more? Oh yes, tacos.
Tacos are an event in this house. Instead of making the normal ground beef tacos, I stepped it up with pulled pork. Two favorite foods combined. You really can’t go wrong.
You can either make these with more of a mexican flare and use the ingredients I did and serve them with pickled onions, cilantro, lime, sriracha mayo, and cotija.. or you can just eat them with more of an American style with cole slaw and BBQ sauce. I highly recommend trying the first.. your taste buds will thank you for something different!

Serves 8
Pulled Pork Ingredients:
- 2-3 lbs. pork loin or shoulder
- 1/2 cup fresh pressed apple juice
- 2 tablespoons apple cider vinegar
- 2 tablespoons tomato paste
- 2 tablespoons chili powder
- 1 tablespoon sriracha or your favorite hot sauce
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons of sea salt (or to taste)
- 1/2 teaspoon freshly ground black pepper (or to taste)
Pulled Pork Process:
1. On a large cutting board or in a large bowl, rub meat with all of the dry spices generously and gently massage them in with your hands. Place the pork in a large crock-pot.
2. In a small bowl, combine apple juice, apple cider vinegar, tomato paste, and sriracha and whisk until combined. Pour liquid mixture over pork.
3. Cook pork for 6-7 hours on medium-high heat or until meat falls apart very easily. (START QUICK PICKLED ONIONS)
4. Let pork cool for 30 minutes and “pull” the pork with two forks. Set aside.
Quick Pickled Onion Ingredients:
- 1 red onion, sliced thin
- 2/3 cup apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon salt
Quick Pickle Process:
1. In a medium bowl, whisk apple cider vinegar, honey and salt until thoroughly dissolved.
2. Add sliced onions to a mason jar, then pour in vinegar mixture and let chill for a few hours in the fridge. (Optional, add hand full of cilantro to the jar)
Grain-Free Tortillas:

Aioli Ingredients:
- 1/2 cup Sir Kensington’s Sriracha Mayo
- Juice of half of a lime
- (Whisk together and drizzle over tacos)
***Assemble Tacos with pork, pickled onions, aioli, cotija cheese, and cilantro (optional)
