Happy Tuesday! The weather is really cooling down lately, but of course, that hasn’t stopped me from wanting ice cream…. I don’t think anything would stop me from wanting ice cream.. This incredibly magical time of year calls for pumpkin everything! Why yes, I am addicted to fall and am one of those pumpkin spice everything girls. I have no shame!
I actually created this recipe last year but didn’t get around to sharing it. The kids love to help me make this and it is super easy AND healthy. You’d never guess that this ice cream is actually good for you. If you want to keep your ice cream scoopable, be sure to add the xanthan gum as recommended. You will still be able to enjoy this without it, but it will be easier to consume straight away.

Easy Vegan/Paleo Pumpkin Ice Cream!
(Vegan, paleo, gluten-free)
Serves 2-4
Ingredients:
- 2 bananas, frozen and sliced
- 3/4 cup fresh or canned pumpkin puree
- 1/2 cup full fat coocnut milk
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon xanthan gum
- 1 teaspoon water
Process:
1. Add all ingredients to a food processor. Pulse until broken up. Add a bit of water if necessary.
2. Puree until smooth.
3. Trasnfer to a dish that can be frozen, or serve right away!
