Happy Thursday, guys!
Well, this day started off interesting. Matt and I FINALLY woke up super early this morning (5 AM) and did our workout together. Every day it’s the usual, “Let’s just sleep in for 30 more minutes”.. Ill tell you what… I feel SO amazing. I had energy immediately after my workout and I was able to get a thousand things done instead of my usual ‘wake up on the couch for an hour while half-assing work’ thing I do. I even found out I got a $100 bonus from coaching, woohoo! Victory dance.
I was feeling totally invincible. I had the house clean, the laundry done, work done, even my make-up done. I even managed to leave the house with Tristan looking nice and dapper without smears of cereal or yogurt on his face or clothes.
I went to my car this morning and we were all ready for story-time at our local library… The car doesn’t start. 15 pathetic tries later, Tristan starts crying that he wants to go to story-time. He starts pounding on things and yelling at me, and I burst into tears. It was one of “those mornings”.
So, there goes my beautifully perfect makeup and social time for Tristan. BUT we ended up having a nice morning instead. We built with blocks and made macaroni and cheese together, we improvised.
I get to sit at the local Walmart tonight and get a new battery for my car spending my bonus on a new car battery.. But hey, this morning my emotional self thought I needed to buy a brand new car. That would have been MUCH worse. Personal development helps me to look on the bright side. 😉
To finally stop boring you and get to the point (food is why we’re all here, right?), Matt and I made Taco Stuffed Peppers, paleoified the other night and they were BOMB. But I noticed something.. You can totally take the filling and make a yummy breakfast hash out of it! So that’s what I did. I heated up our leftover filling and plopped a poached egg on top. DELISH. So that’s what inspired me to post this today. I hope you enjoy this deliciousness of a dish in its entirety. I wish you a great Thursday and a very Happy Weekend!

Spicy Grass-Fed Beef and Sweets Hash!

Ingredients
- 2 large sweet potatoes
- 1 pound grass-fed ground beef
- 2 tablespoons olive oil
- 1/2 jar salsa
- 2 tablespoons chili powder
- 1 teaspoon garlic powder
- 1 dash cayenne pepper
- salt and pepper
- 1 tablespoon apple cider vinegar
Instructions
1. In a large, non-stick skillet (we use cast-iron) at medium-high heat, heat1 tablespoon of olive oil until just hot.2. Add in sweet potatoes and sprinkle with salt and pepper. (*hint, you can always add, but you cant take away)3. Cook uncovered, stirring every 5 minutes until potatoes are just soft. (*this may take 15-25 minutes) 4. In the meantime, heat a separate pan to the same temperature with the remaining 1 tablespoon of olive oil and add in ground beef. Add in all seasonings, minus the salsa and vinegar. 5. Incorporate seasonings and cook until browned. Add in salsa and vinegar after browning. 6. Combine beef and sweet potatoes in a large bowl. Serve and use as taco meat or make a delicious breakfast dish with a poached or fried egg!
