Gluten-Free Oatmeal Cranberry Chip Cookies!

Hey everyone!
Sorry it has been a while! I am FINALLY finished with school and have been able to focus a bit more on my actual work. I’ve been doing really well back on the 21-Day Fix but of COURSE was having a craving for cookies. So, naturally I had to make these. And they are DELICIOUS. They are 21-Day Fix Approved, Gluten-Free and absolutely amazing. Please let me know how these go–I worked hard on perfecting this one!
Oh yeah, for the love of everyone. If you have NO will-power like me, do not make these. HAH. They are really made to enjoy one for dessert 🙂




(gluten-free, 21-Day Fix approved)
Makes 18 cookies 
Ingredients:
  • 2 1/4 cups gluten free oats ground into a flour [do not use oat flour for this. make your own!]
  • 1 teaspoon sea salt
  • 1 teaspoon baking soda
  • 1/2 cup plus 2 tablespoons coconut sugar
  • 3/4 stick organic butter, softened
  • 2 tablespoons apple sauce
  • 1 teaspoon vanilla extract
  • 1 egg, at room temperature
  • 1/4 cup 70 % dark chocolate chips
  • 1/4 cup mini white chocolate chips
  • 1/4 cup unsweetened dried cranberries

Process:
[Preheat oven to 350]
1. Mix oat flour, sea salt, and baking soda in a medium bowl and set aside.
2. In a stand-mixer or by hand, blend butter and sugar until smooth but crumbly.
3. Add in vanilla extract and egg, and mix until smooth.
4. Add in flour mixture, slowly. Mixture will be slightly sticky.
5. With a large spoon, add in chocolate chips, white chocolate chips, and cranberries.
6. Spoon out 1 tablespoon worth of dough, and flatten out slightly on the cookie sheet.
7. Bake 8-10 minutes until golden brown on the bottom. These bake FAST.

  • 1 Blue Container
  • 2 Teaspoons
