It’s Valentine’s Day! Love is in the air. What better way to celebrate with a delicate and delicious dessert? These strawberry cupcakes are gluten-free, free of refined sugars and don’t lack any flavor.

Serves 8
Ingredients:
- 1/2 cup coconut flour
- 1 tablespoon strawberry Shakeology. You can read all about Shakeology and order here!
- 1 teaspoon arrowroot powder
- 1 teaspoon baking soda
- 1/4 teaspoon sea salt
- 4 eggs
- 1/3 cup strawberries, finely chopped.
- 2 teaspoons vanilla extract
Process:
1.Preheat oven to 350.
2. Line a regular-sized muffin tin with 8 muffin liners. Spray with coconut oil spray.
3. In a large food processor, combine and process all ingredients except strawberries.
4. Pour batter into a large bowl, and then mix in strawberries with a rubber spatula or large spoon.
5. Bake cupcakes for 20-25 minutes until golden brown.
6. Top with your favorite whipped cream or coconut whipped cream!
