There’s still a month left of grilling and Summer fun! Being on a gluten free diet, one thing that I really miss is a hamburger bun during the summer. I promise you, you won’t miss a bun with this delicious and simple recipe. You’ll need a large sweet potato and a waffle iron for this recipe. It will take you about 30 minutes to prepare. My husband(who’s a lover of anything with bread) told me he would give up hamburger buns if he could have this instead. That’s how you know that you’ve done something brilliant.

Serves 2
Ingredients:
- 1 large sweet potato, peeled and grated
- 1 large egg, beaten
- 1 tablespoon tapioca or arrowroot starch
- 1/2 teaspoon garlic salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon chili powder
Process:
1. Grate sweet potato and set aside. Turn on waffle iron.
2. Strain sweet potato by wringing out in a towel.(make sure potatoes are very dry)
3. In a small bowl, whisk egg, tapioca and spices and set aside.
4. Combine egg and sweet potato mixture in a medium-large bowl.
5. Add 1/2 cup potato mixture to the waffle iron and cook for about 10-15 minutes until golden brown.
6. Enjoy right away, or freeze the remainder and toast as you need them!
