We went away camping last week. We had tons of fun trying out these graham crackers. They were a hit with everyone we went camping with and also a hit with my 14 month old. These were so incredibly easy. Hard to believe these only took 25 minutes to put together! You will need almond flour for this recipe. Unfortunately, that is the only flour that will work for this recipe. We made s’mores with these. I used organic marshmallows along with organic dark chocolate. If you want to make your own healthy marshmallows, just google “paleo marshmallows”. I haven’t gotten around to making them yet, but please let me know how it goes in the comments section! (paleo, grain free, vegan)
Ingredients:
- 1 1/2 cups almond flour or almond meal
- 2 tablespoons arrowroot or tapioca flour
- 2 tablespoons maple syrup
- 1/2 teaspoon cinnamon
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon sea salt
Process:
1. Preheat oven to 350.
2. In a large bowl, combine all ingredients and kneed with your hands until a dough forms.
3. Roll dough out between 2 pieces of parchment paper until dough is about 1/4 in. thick.
4. Cut dough into 6 (5×2.5 in.) rectangles and score in half.
5. Poke tiny holes in each graham cracker.
6. Bake 6-10 minute until golden brown.
Makes 12 crackers if scored in half.
