It’s only Tuesday!? I need fudge, I need brownies, and I need them now! This was such a fun recipe to create. It’s super easy, requires no baking and tastes amazing. All you need is a handy dandy food processor. You probably have all the ingredients to make this delicious treat in your cabinet, minus the coconut butter. That you may have to run to the store for.. Brownie Ingredients:
- 2 cups coconut flakes
- 3 tablespoons cocoa powder or cacao powder
- 6 pitted dates
- 1 tablespoon coconut flour
- 3 tablespoons ground chia seed
- 2 teaspoons vanilla extract
- 1/2 teaspoon sea salt
- 1 tablespoon water
Brownie Process:
1. Line a 5 x 5 square cake pan with parchment paper.
2. In a food processor, pulse all ingredients except water until combined. Add water, 1 teaspoon at a time until dough starts to come together.
3. Pour dough into pan and push down with your fingers until dough is flat and even.
4. Refrigerate until your fudge is ready.
Fudge Ingredients:
- 1 cup coconut butter, softened(I fill a medium-sized bowl with very hot water and place the jar of coconut butter inside. Be careful not to get any water in the jar)
- 1/2 cup smooth sunflower seed butter(you can use any nut butter also, but this recipe was created to be nut-free)
- 2 teaspoons pure vanilla extract
- 1/4 cup raw honey or maple syrup
- 1/2 teaspoon sea salt
- Cacao nibs for topping(optional)
Fudge Process:
1. Add all ingredients to a food processor and process until smooth and creamy.
2. Pour fudge mixture over brownie base.
3. Top with coconut flakes, cacao nibs, or chocolate chips(optional).
4. Refrigerate fudge brownies until firm and enjoy!
