Easy as Chocolate Cream Pie

When chocolate is calling your name, you have to give in. Turn to this easy, healthy, and decadent chocolate cream pie! The filling’s secret ingredient will shock you as well as fool your taste buds into thinking you’re eating something truly sinful. Not only is this pie easy to make, it’s delicious and packed with vitamins and nutrients. The entire pie is made with entire whole food and vegan ingredients. All you need to go along with the ingredients is a food processor and a mixer! I invite you to try out this recipe for yourself, family, and friends. This one will be great for a party.

(paleo, vegan, gluten free)

Serves 8

Crust Ingredients:
  • 2 cups raw pecans
  • 1 cup fresh dates, pitted
  • 2 tablespoons cocoa powder
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon sea salt
    Crust Process:
    1. Pulse all ingredients in a large food processor until mixture forms a dough.
    2. Press dough into an average-size pie pan.
    3. Refrigerate crust until you are ready for next step.

    Filling Ingredients:

    • 3 ripe avocados
    • 2 cups fresh dates, pitted
    • 1/3 cup cocoa powder
    • 2 teaspoons maple syrup or honey
    • 2 teaspoons vanilla extract 
    • 1/2 teaspoon sea salt

    Filling Process:

    1. Combine all ingredients in a food processor and process until mixture is smooth and creamy.
    2. Add filling on top of crust and smooth over.

    Coconut Cream Ingredients:

    • 1-14 oz. can coconut cream(I get mine from Trader Joes) *You can also use refrigerated full fat coconut milk, just scrape the cream off the water)
    • 2 teaspoons maple syrup or honey
    • 1 teaspoon vanilla extract

    Coconut Cream Process:

    1. Whip all ingredients with a handheld mixer or Kitchen Aid mixer.
    2. Add whip cream to pie filling and refrigerate until set.

    **Add mini chocolate chips if you desire.
