I’m a huge lover of key lime pie. Wouldn’t a key lime pie with tons of nutrients that is guilt free be even better? This recipe is both of those things. It is packed with healthy fats, vitamins and nutrients that will nourish your whole family(and it’s sinfully delicious). Celebrate spring and make this pie for you, your family, and your friends. Serves 6-8
Pie Crust Ingredients:
- 1/4 cup ground chia seeds
- 1/3 cup filtered water
- 2 1/4 cups unsweetened coconut flakes
- 3 tablespoons coconut sugar
- 1/4 cup arrowroot powder
- 2 tablespoons coconut flour
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon sea salt
Filling Ingredients:
- 2 large avocados
- 1 cup coconut cream(you can buy canned coconut cream or use separated coconut cream from a can)
- 1/2 cup honey or maple syrup
- 3 tablespoons coconut oil
- 1/3 cup lime juice(from about 2 large limes)
- 2 1/2 tablespoons arrowroot powder
- 1 1/2 tablespoons lime zest
Pie Crust Process:
1. Line a 9 inch pie pan with parchment paper(or use a spring form pan).
2. Grind chia in a coffee grinder or high speed blender. Add filtered water and chia in a small bowl and set aside.
3. Pulse coconut flakes and chia in a food processor until combined.
4. Add remaining ingredients and pulse until the dough starts to form.
5. Remove from food processor and press into pan.

Filling Process:
1. In your now clean food processor, blend all filling ingredients until very smooth.
2. Add filling into your pie crust and chill in the fridge for 3 hours until everything is set.
3. Serve with homemade whipped cream(optional) and lime zest!
