Happy Wednesday everyone! For those suffering from the mid-week slump, why not make some pancakes? These pancakes are not only full of flavor and mouthwatering, but they are packed with nutrients and are high in protein. They also contain ground flax, which is high in important Omega Fatty acids for your body. These pancakes will be an amazing start to your day and give you the energy that your body needs. My 10 month old loved these too! He devoured them faster than I did….
(paleo, vegetarian, gluten free)
Makes 6 pancakes
- 1/3 cup coconut flour
- 1/4 cup plus 1 tablespoon almond meal or flour
- 2 teaspoons ground flax seed
- 1/4 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1 tablespoon coconut sugar or honey
- 4 eggs
- 1/2 cup almond or coconut milk
- 2 teaspoons vanilla extract
- 1 tablespoon honey or maple syrup
- 1 tablespoon butter, coconut oil, or ghee, melted
- 1 large apple, peeled and grated
- Coconut oil or butter for greasing griddle
1. Mix dry ingredients thoroughly in a large bowl and set aside.
2. Add all wet ingredients except apple and beat until combined.
3. Slowly add the wet mixture to the dry mixture and beat until smooth.
4. Fold in apples after mixture is combined. You may need to add more water(1 tablespoon at a time) until you reach your desired pancake consistency.
5. Heat griddle or skillet to about 350 and then add pancake mixture(1/3 cup for each pancake)
6. Cook for 3-6 minutes on one side until you see bubbles pop. Gently look under the pancake to see if they are golden.
7. Flip and cook on the other side for 3-4 minutes.
8. Enjoy topped with butter or coconut oil, apples, and maple syrup with more cinnamon.
