After devouring all of the Easter chocolate in the house(bad!!), I found myself left with nothing sweet to munch on. Anyone that knows me knows this is bad news. Guilt free and delicious desserts must always be available! Who doesn’t love the flavor combination of chocolate and peanut butter? I created this recipe over the week and it’s definitely delicious enough to share! The recipe is sweetened with dates and the chocolate chips are optional. These can easily be made paleo substituting any nut butter. They are also vegan and gluten free. Since no baking is required, you can make these in literally 10 minutes or less!

Serves 9
- 1 cup almond meal or ground almonds
- 1 cup fresh pitted dates
- 1/2 cup plus 1 tablespoon peanut butter, almond butter, or cashew butter
- 1 1/2 teaspoons vanilla extract
- 1 tablespoon ground flax or ground chia seed
- 1/4 teaspoon salt(unless peanut butter is salted)
- 1/4 cup chocolate chips(optional)
2. In a bowl, combine dough and chocolate chips by hand.
3. Form into balls and flatten into 2-2 1/2 inch cookies.
*Enjoy with a glass of milk or replacement!
