Pancakes are something that I’ve really missed being on a primarily paleo diet. I have another recipe for blueberry pancakes, but these pancakes are a lot different. They are a chocolate lovers dream come true and they are SUPER easy to make. These pancakes are sure to please the kids too!
(paleo, vegetarian, gluten free)
Serves 2
Ingredients:
- 1/2 cup coconut flour
- 2 tablespoons cocoa powder
- 4 egg whites
- 1 cup almond, rice, coconut or regular milk
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- 2 teaspoons vanilla extract
- 3 tablespoons 70% or higher dark chocolate chips
Process:
1. Heat griddle or nonstick pan on medium heat with coconut oil.
2. Combine all ingredients into a food processor or mixer except chocolate chips.
3. After thoroughly combined(may take a few minutes), add chocolate chips.
4. Make sure pan is very hot before pouring batter onto pan or griddle.
5. Cook on medium heat until bubbles have begun to burst on the top of the pancakes. Flip and cook for a few more minutes.
