March is my birthday month and it’s also my mother’s birthday month who passed a couple years back. I wanted to make something delicious, healthy and rich that would satisfy my birthday sweet tooth! These tarts are similar to the “Hail Merry” brand you can find at Whole Foods. They are perfect for large parties or for sweet treats for your family that will last up to a week in the fridge. These little bites are very filling so 1 or 2 usually suffice.
(paleo, vegan, gluten free, raw)
Serves 18
Crust Ingredients:
- 1 1/2 cups almond meal
- 1/2 teaspoon salt
- 3 tablespoons coconut oil
- 2 1/2 tablespoons maple syrup or honey
- 6 tablespoons cocoa powder
Filling Ingredients:
- 1 1/4 cups cocoa powder
- 1 cup pure maple syrup or honey
- 2 tablespoons coconut oil
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon sea salt
Process:
1. First, combine almond meal, salt, coconut oil, sweetener, and cocoa powder in a food processor. Pulse until it starts to hold together.
2. Using a mini muffin pan with 18 sections, line with muffin liners.
3. Press dough into muffin liners and form so dough goes up the sides.
4. Chill in refrigerator while you start the next steps.
5. Clean the food processor and combine the cocoa powder, maple syrup, coconut oil, vanilla and sea salt in the processor. Blend until smooth.
6. Spoon the filling into each tart crust. Smooth out and chill in the refrigerator for 1-2 hours.
