Ingredients
- 2 cups almond meal or flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 3 eggs
- 1/4 cup coconut oil or grass-fed butter
- 1/4 cup coconut sugar
- 2 teaspoons vanilla extract
- Pinch of sea salt
- 1/4 cup dark ,.chocolate chips
Topping:
- 1/4 cup butter or coconut oil
- 1/3 cup coconut sugar
- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1/4 teaspoon cinnamon
Process:
1. Preheat oven to 350. Grease an 8 inch round cake pan with butter and dust with almond flour
2. Combine almond flour, salt, and baking soda in a large bowl and mix thoroughly.
3. With a mixer or handheld mixer, blend oil(or butter), vanilla, and coconut sugar until combined. Add eggs one at a time until mixture is smooth.
4. Add in chocolate chips and mix by hand.
5. Pour the batter into the prepared pan.
6. To make the topping, pulse together the oil(or butter, sugar, flours, and cinnamon by hand or pulse with a food processor. Sprinkle this mixture over the entire cake.
7. Bake cake for 25-35 minutes until golden brown and a toothpick comes out clean.
8. Chill cake for 1-2 hours and then serve!
