Yummy Breakfast Skillet

(paleo, gluten free, vegetarian)
Serves 2-4

Sometimes I feel like breakfast can get pretty boring. Why not mix it up sometimes and add more nutrients and delicious to start your day? This recipe is full of veggies and it’s a hit in our house. It only takes about $3 and 20 minutes of your morning.



Ingredients

  • 4 whole eggs
  • 1/2 red onion, diced
  • 1/2 medium sweet potato, peeled and grated 
  • 1/2 medium red bell pepper, diced 
  • 1 tablespoon coconut oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 chopped jalapeno or serrano pepper, optional
  • guacamole, optional 
Instructions

1. Prepare onion, pepper, and sweet potato.
2. Heat coconut oil a medium sized skillet or cast iron skillet(I use cast iron) to medium-high heat.
3. Add seasonings and saute onions, sweet potato, and pepper until just tender.
4. Create 4 egg holes in your skillet to crack the eggs into. Add eggs and cook on low heat with a lid until eggs are cooked to your liking. It should look something like this once the eggs are cooked….
5. To serve, cut into 2-4 sections and enjoy with serrano chile peppers and guacamole if you’d like!
