I created this recipe while I was living in Toronto. There are SO many amazing vegan, paleo, local, organic, you name it restaurants in Toronto. Being a student at the time, I had to resist temptation to buy treats like these all of the time! I spent a lot of time creating recipes in my apartment. Here is one of the first things I came up with. To my surprise, they tasted just like chocolate cheesecake.. Which I thought was extremely odd, but delicious! These use a secret ingredient that you won’t be able to point out unless you are the baker!
Ingredients:
- 2 cans rinsed organic black beans
- 1/2 cup good quality cocoa powder
- 2 teaspoons vanilla extract
- 2 teaspoons arrowroot starch
- 1/4 tsp cinnamon
- 1/8 tsp of salt (if the beans are unsalted)
- 1/4 cup coconut oil
- 2 tablespoons peanut butter
- 2 eggs (or egg replacement)
- 1/3 cup of date paste, honey, or maple syrup.
Process:
1.Blend all ingredients in a food processor until smooth.
2.Transfer mixture to a greased pan and spread until even.
3. Bake at 350 for 15-20 minutes until the middle comes out clean with a toothpick.
4.They may seem too moist at first but they solidify once in the fridge!
*Top with whatever your heart desires. Whipped cream, cashew cream, or ice cream! 🙂
