Quick and Easy Pasta with “Cheese”

Pasta Ingredients:

  • 1 Package Gluten free Spaghetti OR zoodles(zucchini noodles)
  • 1 can crushed tomatoes
  • 1 tbsp tomato paste
  • 1-2 tsps onion powder
  • 1-2 tsps garlic powder
  • 1 tsp oregano
  • 1 teaspoon basil
  • 1 cup chopped portobello mushrooms
  • 1 cup spinach
  • 2 teaspoons olive oil 

Cashew Cheese Ingredients:

  • 1 cup soaked cashews
  • Juice of 1 lemon
  • 1 clove garlic
  • Italian Seasoning and Salt/Pepper to taste
  • Almond milk or water(until you reach your desired consistency)

Sauce Process:
1. Saute vegetables and garlic with 2 teaspoons of olive oil. Add in crushed tomatoes, tomato paste and spices. Simmer as long as it takes to cook the rest of your meal!
2. Cook pasta according to instructions or prepare “Zoodles”

Cashew Cheese Process:
3. Add all ingredients into a food processor and blend until you’ve reached a ricotta cheese consistency.
4. Add the sauce to the pasta or zoodles and then add the “cheese” on top! Enjoy!
