Tapioca pudding is my absolute favorite dessert. While it has no protein, it does contain iron! When I don’t want to eat my spinach, I cook up some tapioca! You can score tapioca pearls at the grocery store for as little has $.69 a bag! This amount of tapioca will make you 20 or more servings of pudding. Eat it for breakfast, snack, dessert, whatever your heart desires.. Here’s the recipe. You can also substitute the tapioca for quinoa cooked extra long for extra protein!
- 1/2 cup tapioca pearls(soaked for at least 1 hour in 2 cups of water)
- 1/2 cup water(more or less depending on how thick you like your pudding)
- 1 1/2 cups canned coconut milk
- 1 tsp pure vanilla extract
- 1 tsp cinnamon
- 1/4 cup honey, maple syrup, or date coconut sugar
- Raisins(optional)
- Coconut flakes(optional)
1.Rinse and drain tapioca pearls. Set aside.
2.Combine water and coconut milk and bring to a boil in a medium sauce pan.
3.Add tapioca and bring down to a simmer.
4.Add vanilla, cinnamon and sweetener.
5.Simmer for 20 minutes stirring frequently until the tapioca pearls are translucent.
6.Top with raisins and coconut flakes!
